 Took the family to Puerto Rico tonight with this Mofongo con Camerones. I’ve wanted to use plantains in a dish for a while and it’s a great alternative to the typical thing.

Delicious lentil soup from http://www.101cookbooks.com/archives/red-lentil-soup-with-lemon-recipe.html . Had a bit of a kitchen disaster when I overfilled the blender with this soup. Luckily most was saved and the soup reminded me of the yummy one I used to have at Vatan in Murray Hill.

Vegan/Gluten free cupcakes from Babycakes Bakery in the lower east side. So good! Went to dinner with a friend at Barrio Chino across the street and saved room for dessert after!

My new favorite sandwich from Bergamote in Chelsea. Chicken, mozzarella, avocado, tomato, and mustard aioli sauce.

Popovers with almond milk made in a muffin pan…however, I forgot the salt!!! Still delicious and airy, but next time I won’t forget the salt, it’s the leavening agent in the recipe.

Yummy Baked Cinnamon and Honey Doughnuts

A light, chewy, and no guilt doughnut! They are delicious.

1/2 cup almond milk

1/2 teaspoon cider vinegar

3 tablespoons water

1 tablespoons ground flaxseed meal

1/2 cup agave syrup (or you can use sugar)

2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon xanthan gum (adds chewiness to gluten free baked goods)

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 1/2 cups All Purpose Flour (I used Red Mill) the original recipe called for gluten free flour which I didn’t have

1/4 cup almond flour

Preheat oven to 350 degrees.  Lightly grease 6 or 8 donut molds with cooking spray.

In small bowl, make “buttermilk” by combining the almond milk and cider vinegar.  In another small bowl, mix together the water and flaxseed meal and allow to thicken for 3 to 5 minutes.

In a large mixing bowl, whisk together baking powder, baking soda, salt, xanthan gum, cinnamon, and nutmeg.  Stir in the flaxseed mixture, the “buttermilk” mixture, and then the agave.  Gradually add the all-purpose flour and almond flour and stir until the dry ingredients are thoroughly combined but the dough is still soft.  Spoon the dough into donut molds and bake 15 to 20 minutes, or until donuts are golden and firm.  Remove the donuts from the oven and turn out onto cooling racks to cool.

Spread raw honey on top for a light sweetness.

Serves about 6 to 8.

For a quick lunch, use those left-over mashed potatoes from Christmas dinner and place this poached egg on top with turkey bacon. Deliciousness!

Cinnamon rolls with almond milk and whole wheat pastry flour in 20 minutes!

Ingredients

Dough
  • 2 cups flour (white flour, whole wheat or pastry flour)
  • 1 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 3/4 cup almond milk

    Filling
  • 4 tablespoons butter
  • 2/3 cup brown sugar
  • 3 teaspoons cinnamon

    Glaze
  • 1/3 cup powdered sugar
  • 1/4 cup almond milk
Directions
  1. Preheat oven to 400.
  2. For the filling, in a small bowl combine softened butter, brown sugar and cinnamon to form a crumbly mixture
  3. Sprinkle 1/2 of the mixture over the bottom of a 9x9 pan.
  4. In a large bowl mix together flour, sugar, baking powder, and salt.
  5. Cut in softened butter
  6. Stir in milk to form a soft dough.
  7. Roll out dough on a lightly floured into a rectangle about 1/4 inch thick.
  8. Spread the remaining filling on the rolled out dough.
  9. Roll up the rectangle
  10. With a sharp knife slice into 8 small rolls. Place in cake pan.
    (Not sure if I should have rolled in toward the shorter side, maybe less sugar and get more out of them)
  11. Bake for 20-25 min at 400°F.
  12. For glaze, combine powdered sugar and milk in a small bowl and stir until smooth.
  13. Let cool for 5 minutes and enjoy.
